Montego's Lime

Limes are considered the sharpest fruit of the citrus family and provides a very strong zingy and refreshing flavour. Limes carry moderate concentrations of vitamin-C on comparison to other citrus ategory fruits like oragnge and lemon, they also contain relatively more vitamin-A than lemons.<br /><br />Limes can be used as a substitute for lemons in most dishes as the flavour profiles are similar but can be much harsher to the palate. The juice can be squeezed into cocktails or sprinkled over finished dishes to enhance their flavour; it effectively 'cooks' raw fish in ceviche. They can also be used to give a kick to many desserts such as pies.
